Easy, nutritious, tasty and inexpensive from non-seasonal ingredients. I could not ask for more in a recipe! I wanted to try this because it sounded so easy and accessible. My family loved it! I had fresh herbs on hand but bet it is good with dried too. Thank you!

This came out thick and flavorful, but I added extra broth so I could cook it quite a while longer (probably 45-50 min). I used 2 kinds of turkey sausage (we don't care for sweet Italian), dried herbs, and diced tomatoes. I doubled the recipe and froze some for later. I'd make the same adjustments in the future.

Tasted it right after it was cooked, tasted sort of bland... but the next day all the flavors blended well. Easy to make, simple ingredients, would make again. I used fresh onions, dried herbs and no romano cheese.

I used fresh onions and garlic but did not have fresh hearbs; substituted kale for spinach, since that's what we had in the house, and added some noodles at the last minute. wonderful on a cold night.

I really enjoyed this soup. I have made it twice now and it has even impressed my guests. It was just as delicious from the freezer. I used dried italian seasonings and it was great - it would be truly fantastic with fresh herbs. I love the fact that the recipe isn't too large - it really does make four servings, so if you are looking for left-overs to freeze be sure to double up.

Delish! I used hot sausage and added a chopped chipotle pepper for a spicy kick. This is definitely going to be a go-to for cooler weather. It would be good with a small size pasta added too.

This soup was delicious and simple to make. I subbed kale for spinach as another reviewer suggested and also added some tabasco. I used dried herbs and don't think fresh herbs are needed. It was a hearty soup that feels like a meal especially when served with crusty bread. I will definitely make it again and would gladly serve to others.

One of my favorite soups! We use diced tomatoes because we don't like them to be so big. A great dinner when paired with a baguette.

This is an extremely fast soup to make, and it comes out great everytime. I have made it several times now and have found that both my husband and I like this better with sweet onions, kidney beans and diced tomatoes. The stewed gave it more of a "pizza sauce" type of taste. I've used this with fresh and dried herbs and actually prefer the dried. Overall, this is a soup I will continue to make- and it's one of my husbands favorite dinners- which surprised me!

Followed recipe proportions except for almost doubling the broth. Used all fresh ingredients -- why does CL specify fresh herbs but bottled garlic and pre-chopped onion? While the sausage browned, microwaved onion & garlic in some broth til soft. Used petite-diced tomatoes and subbed broth for water. Served with ciabbatta sticks & chopped romaine salad.

I made this last night and thought it was worthy of 3 stars; quite tasty for how easy it was, but nothing outstanding. However, I just had the leftovers and WOW. The leftovers were a definite 5 star. It's definitely a dish that gets more flavorful as it sits. I'm giving it an average of 4 rating given the "ho hum" of last night, but I suspect giving it more time to simmer on the stove in the future would make it a solid 5 star recipe. A couple variations... - used chicken sausage instead of turkey since that's what I had on hand - added a couple dashes of red pepper flakes (husband loves a little spice) - used kale instead of spinach. I HIGHLY recommend this substitution. It's extremely good for you, and while kale is a bit chewy for most preparations, it works perfectly in a soup where it breaks down a bit.

I've been making this since it came out in Cooking Light in 07, an excellent and flavorful soup. I use the dried herbs, and fresh parm can replace the romano if needed.

What a great recipe to serve! I used cranberry beans in this recipe and they went well as a substitute!! I sauteed onions and added some zucchini, kept the chicken sausage in its casing (but halved), then added spinach til almost wilted before adding garlic + rest of ingredients. Everyone loved the soup.

This was excellent! I added about a cup and a half of al dente pasta (Orecchiette), which made it heartier without adding too many calories. The flavors were so good for such a simple recipe!

This is my husband's favorite dinner now! I've made several times in the last few months because he keeps requesting it! I use kale instead of spinach because I like how it stays crisp over time and I add several more cloves of garlic but other than that, I follow the recipe exactly and its wonderful! Great leftovers!

Easy and delicious! I've made it several times, but this time I used a turkey kielbasa, red and yellow onions and dried basil/oregano. I really like using the kielbasa more and would suggest others do the same as the flavor is much better. This has become a staple for and easy, flavorful dinner!

We LOVE this soup! It is by far the easiest and best tasting soup I've ever made. It takes no time at all to make. Occasionally I throw in a package of frozen tortellinis and it makes it a hearty soup. I hope you enjoy this recipe as much as my friends and I do!

This was amazingly delicious and easy!! You basically just dump it in a pot and it comes out perfect! I used Italian seasoned tomatoes instead of regular. I squeezed 5 servings out of it instead of one and froze 4 of them. I will definitely make this again. This is the best soup I've ever made!

This recipe was sooo easy to make, quick, and perfect for both weekdays or special ocassions since it is so colorful. I made it with 3 turkey sausage links (~12oz), a bigger Progresso can of beans, and a 16 oz carton of broth. I also added some pepper per previous reviews and used regular stewed tomatoes (not orgnanic). I served it with a baguette and it was just DELICIOUS! It made enough for two (we each went for seconds) and next day leftovers, which my husband took since he loved it (and he's nota soup person!)

This was a delicious, simple, and nutritious soup. I used hot turkey sausage, fresh garlic, and some Italian herb squeeze paste instead of the fresh, but otherwise followed the recipe. I'll definitely be adding this soup to the regular rotation. My husband devoured it without adding copious amounts of Tabasco sauce! That's a rare occurrence in our household.

For a 15-minute soup, this is pretty good. It doesn't have the depth of flavor you'd get from something more complex, but for a weeknight, it's a quick way to have something that is filling and tastes pretty good.
