All summer long I’ve been making lots and lots of no churn ice cream.

I tried several methods (you can read about my experiments here), and once I figured out the recipe I liked the best for a standard batch of ice cream (check out my clotted cream ice cream recipe here), I started making super easy individual batches of ice cream featuring the most popular flavors on the IDB…and more.

It’s been a fun challenge to figure out how to capture these flavors in quick and easy frozen treats (I like a challenge…especially one tastes so good)!

Each recipe yields 1-2 portions, depending on how big you want your portion to be. I can easily down an entire jar of any of these ice creams but they’re also a good size for sharing if you prefer a portion-controlled dessert.

If you want to make a larger amount of ice cream, just double, triple or quadruple each recipe and use a larger container.

Each of these ice cream recipes can be prepared in about 5 minutes and will be ready to eat after an hour or two in the freezer. Prepare your ice cream before you start dinner and dessert will be ready and waiting for you!

I make my ice cream in 8oz mason jars but you can use whatever jar (or jar-like container) you’d like. Just make sure you’ve got a tight-fitting lit, that it’s freezer safe, and easy to to eat out of (my husband and I grab a spoon and eat right out of the jar).

Because these recipes are egg free, you can taste them and adjust the flavoring before they go in the freezer.

Sweetener: I mostly make single-serve no churn ice cream without sweetened condensed milk because I don’t want to open a can when I only need a tablespoon. Instead, I often use white sugar, brown sugar, and golden syrup because I always have them in my cupboard and the brown sugar and golden syrup add a lovely flavor. That said, you can also use sweetened condensed milk, corn syrup, maple syrup, etc, but note that the flavor will change a bit.

Nutella Ice Cream

Quick and easy no churn chocolate hazelnut ice cream!

Ingredients

  • 1/2 cup [120g] heavy cream
  • 1 TBSP chocolate hazelnut spread (Nutella)
  • pinch of salt
  • 1 tsp hazelnuts (roasted, chopped)

Instructions

  1. Pour cream into a small jar. Add Nutella.
  2. Stir until well combined.
  3. Add hazelnuts (optional).
  4. Place lid on the jar and then shake the jar 20-25 times until the cream has thickened.
  5. Place the jar in freezer for 1-2 hours.
  6. When you're ready to eat the ice cream, take the jar out of the freezer and let it warm up for a few minutes.
  7. Top with Nutella and chopped hazelnuts (optional).

Notes

1. You can buy Nutella or make it at home.

Golden Syrup Ice Cream

Ingredients

  • 1/2 cup [120 ml] heavy cream
  • 1 TBSP golden syrup
  • 1/2 tsp vanilla
  • pinch of salt
  • golden syrup for drizzling (optional)

Instructions

    1. Pour all ingredients into a small jar that has a lid. (I typically use an 8oz jam jar.)
    2. Stir until ingredients are well combined.
    3. Put the lid on the jar and then shake the jar several times until the cream has thickened. (I usually shake it 20-25 times.)

This quick and easy ice cream recipe featuring Dutch speculaas spice mix is seriously delicious, no matter the time of year!

Ingredients

  • 1/2 cup [120 ml] heavy cream
  • 1 TBSP brown sugar
  • 1/2 tsp speculaas spice mix
  • 1/2 tsp vanilla
  • pinch of salt

Instructions

    1. Pour all ingredients into a small jar that has a lid. (I typically use an 8oz jam jar.)
    2. Stir until brown sugar has dissolved and ingredients are well combined. Taste the ice cream; if you want it sweeter or to have a stronger speculaas spice flavor, add additional brown sugar or spice mix to taste.
    3. Add the lid and then shake the jar several times until the cream has thickened. (I usually shake it 20-25 times.)
    4. Place jar in freezer for 1-2 hours.
    5. When you're ready to eat the ice cream, take the jar out of the freezer and let it warm up for a few minutes.
    6. Sprinkle a bit of speculaas spice mix on the top of the ice cream (optional).

Instructions

  1. Pour all ingredients into a small jar that has a lid. (I typically use an 8oz jam jar.)
  2. Stir until ingredients are well combined. (Since the lemon curd thickens the cream I don't usually need to shake it much, if at all.)
  3. Place the jar in freezer for 1-2 hours.
  4. When you're ready to eat the ice cream, take the jar out of the freezer and let it warm up for a few minutes.
  5. Top with a dollop of lemon curd, raspberry sauce or fresh raspberries.

Notes

  • Since the lemon curd contains sugar, I don't add any extra to the ice cream. If you prefer a sweeter ice cream, try adding sweetened condensed milk or sugar.
